Pressing enter while renaming any field in the UI Builder window makes the text go up, until it disappears
How to reproduce:

2. Create a new UI Document (Right-Click in the Project Window -> Create -> UI Toolkit -> UI Document)
3. Double-click the newly created UI Document
4. Create a Numeric Field object (int, float, double, long), from the menu on the left
5. Right-click the created field in the Viewport
6. Rename by pressing enter after the text of the field
7. Observe the text of the field
Expected result: Text does not disappear after pressing Enter
Actual result: Text disappears after pressing Enter a couple of times

Resolution Note:
This is by design. The in-place text input that appears in the Builder's Canvas is subject to the same constraints as the Label underneath (the one being edited). When you press Enter, you add newlines but the text input cannot grow so your text scrolls up out of view. You can still use the arrow keys to scroll it back into view.
