Particle System emission ignores the Sprite Atlas when using a Material that has the "Include in Build" setting unchecked
How to reproduce:
1. Open the “Sandbox“ project
2. Open the “TexDuplication“ scene
3. Enter Play mode
4. Observe the Particle System in the Scene View
Expected result: Particles are white
Actual result: Particles have image
Reproducible in: 2022.3.60f1, 6000.0.42f1, 6000.1.0b10, 6000.2.0a6
Reproducible on: Windows 10, Windows 11 (user’s)
Not reproducible on: No other environment tested
Notes: Also reproducible in Player

Toggling off "Include in Build" is unsupported for ParticleSystem/Mesh Renderers and only supported for 2D Renderers.
