In run-mode, modify color of ui image by animation is inoperative.
To reproduce:
1. Open attached project
2. Open Test scene
3. Press play
4. Notice that animation on UI Image component doesn't change color in game view, but color changes in Inspector. Also notice that animation on sprite works fine and changes colors.

Why they won't fix it? shame on you MS. I'll consider that before choosing my development platform.

Looking into the UI source code (https://bitbucket.org/Unity-Technologies/ui/src/5fc21bb4ecf4b40ff6630057edaa070252909b2e/UnityEngine.UI/UI/Core/Graphic.cs?at=4.6), we can see that the vertices are set dirty only if the color is changed through the "color" property.
[SerializeField] private Color m_Color = Color.white;
public Color color { get { return m_Color; } set { if (SetPropertyUtility.SetColor(ref m_Color, value)) SetVerticesDirty(); } }
Unfortunately, it seems the animation is using the m_Color serialized field, thus bypassing the call. Manually calling SetVerticesDirty can help bypass the problem.

Same problem for us. We constantly have to add dummy property modifications to our animations in order to get the graphic to refresh with the animated color.
